Sweet and sour aubergine with almonds

Ingredients

  • 400g eggplant, cut into cubes
  • 2 onions, quartered
  • 50 ml olive oil
  • 1 clove garlic chopped
  • 1 tablespoon capers
  • 70 g green olives, pitted
  • 1 teaspoon dried, oregano
  • 50g salt

Step 1

Insert the StirAssist into the bowl, add the onion, garlic, aubergines, capers, olives and oil.

Step 2

Set the Stew P11 function then press Start to begin cooking.

Step 3

When the tone sounds, add the chopped tomatoes, a pinch of oregano, 2 basil leaves, vinegar, almonds and salt, then press Start to finish cooking.
