Fried rice with tofu

Ingredients

  • 1 small onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 30 g fresh ginger, peeled and chopped
  • 1 small red chilli (optional)
  • 2 tablespoons vegetable oil
  • 150 g broccoli, cut into florets and rinsed
  • 170 g firm tofu, cut into 1cm cubes
  • 500 g cooked cold boiled long grain rice
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon white sugar
  • 2 eggs, lightly beaten
  • 2 green onions, sliced

Step 1

Insert Mini Bowl and Mini Multiblade and add onion, garlic, ginger and chilli (if using). Press PULSE for 2 seconds. Scrape down sides and repeat until finely chopped. Remove.

Step 2

Insert StirAssist and add 1 tablespoon of oil and the chopped onion and garlic mixture. Select FRY P2. Remove measuring cup from lid and press START twice to begin STEP 1.

Step 3

After 5 minutes, press PAUSE and add broccoli and tofu. Press START to begin cooking. At the end of STEP 1, add rice, oyster and soy sauce, sesame oil and sugar. Press START to begin STEP 2.

Step 4

While the rice is heating, add remaining vegetable oil into a small frying pan and heat over medium high heat. Add eggs and cook, without stirring, for 1-2 minutes or until just set. Tip onto a plate and slice into strips.

Step 5

At the end of the cooking time, serve rice, topped with slices of egg and green onions.

Tips

For best results, cook rice the day before and place onto a flat tray, uncovered in the refrigerator to cool and dry out overnight.
