Polenta with blue cheese and sage

  • 6 cups (1.5 litres) chicken or vegetable stock
  • 2 teaspoons flaked sea salt
  • 2 tablespoons extra virgin olive oil
  • 5 fresh sage leaves, chopped, plus extra for garnish
  • 300g polenta
  • 1/2 cup (40g) freshly grated parmesan cheese
  • 150g blue cheese, crumbled

Step 1

Insert StirAssist and add stock, salt and oil. Select BOIL P2 and press START twice to begin STEP 1.

Step 2

At the beep, open the lid and add the sage, close the lid and press START to begin STEP 2. Remove the measuring cup and pour the polenta down the chute. Replace the measuring cup.

Step 3

With 5 minutes remaining on the cooking time, press PAUSE and add Parmesan. Press START to continue cooking.

Step 4

To serve, pour polenta into a serving dish, alternating with chunks of blue cheese. Wait a minute for the cheese to melt and serve immediately garnished with extra chopped sage.
